Jasmine rice is unique among long-grain varieties in that it is relatively low in amylose (the starch component), which means that it clumps and holds its shape when it is kneaded. It comes from Indochina, where the climatic conditions are ideal for growing it. This rice has pure white, thin and long grains that resemble basmati rice. Its taste is mild with a hint of sweetness. It has excellent digestibility and a low sugar content. It is mainly used in Asian cuisine, but can also be used in risotto or as a side dish.
